Salsa

This simple salsa reflects the colors of the Mexican flag.

Ingredients

  • Equal parts Roma tomato
  • Onion (white or red)
  • Fresh cilantro (known as coriander in the UK)
  • Jalapeño or serrano chiles (or a combination), to taste. Use at least one.
  • Salt to taste

Directions

  1. Start by cutting the Roma tomatoes open and remove all the seeds. Next, dice the tomatoes and onions. Chop the cilantro. Combine all ingredients in a bowl.
  2. To prepare chiles, bisect the chiles, then with a spoon remove the seeds and the white rib meat, then mince. Add salt and chiles to taste.
  3. For a liquid salsa, put all ingredients except the cilantro in a food processor and pulse until the desired consistency is reached. Stir in cilantro to taste.
