Bruschetta

Ripe tomatoes, basil and paper-thin garlic on grilled peasant bread.

Ingredients

  • 2 ripe tomatoes, cored, seeded and medium dice
  • 10 fresh basil leaves, finely shredded
  • 5 large garlic cloves: 1 halved, the other 4 sliced paper thin
  • 8 (3/4-inch) slices Italian peasant bread
  • 3 tablespoons extra-virgin olive oil
  • Kosher salt or sea salt

Directions

  1. Preheat the grill or broiler.
  2. In a medium bowl, combine the tomatoes, basil and sliced garlic. Set aside.
  3. Grill or toast the bread slices until golden brown, about 2 to 4 minutes per side. Rub one side of each slice with the cut side of the garlic, then brush with some of the olive oil.
  4. Add the remaining olive oil to the tomatoes and season with salt. Spoon some of the tomato mixture onto each slice, sprinkle with salt and serve immediately.
